Stir Fried Bok Choy and Tofu

Serves 2


  • 2 bunches bok choy, washed and trimmed
  • Cooking oil
  • 12 fried tofu puffs
  • 2 Tbsp oyster mushroom sauce 1 Tbsp soy sauce
  • 1 cup vegetable stock
  • 2 Tbsp cornstarch
  • 1 tsp sugar
  • 4 cloves garlic, minced
  • 1 thumb sized ginger, minced
  • 1 shallot, very finely chopped Salt & pepper
  • Sesame oil
  • Sesame seeds
  • Steamed rice to serve


    1. Combine oyster sauce, soy sauce, sugar, vegetable stock and cornstarch in a bowl, mix well then set aside
    2. Fry the tofu lightly in a wok with oil over high heat. Remove and set aside
    3. Sauté shallot, garlic and ginger
    4. Add the tofu back to the wok along with the bok choy and stir fry for 30 seconds on high heat
    5. Pour the sauce mix into the pan, bring to the boil and let it thicken
    6.  Drizzle some sesame oil on top, sprinkle with sesame seeds, season with salt and pepper then serve over steamed rice
