‘Tuna’ lettuce boats

Serves 4 | Recipe by Dalena Truong


  • 6 cos lettuce leaves
  • 400g can chickpeas, drained
  • 400g can corn kernels, drained
  • 1⁄4 red onion, diced
  • 1 tomato, diced
  • 1⁄2 cucumber, diced
  • 1 tbsp Hulled Tahini
  • 1⁄2 tsp garlic powder
  • 3 tbsp Kewpie vegan mayonnaise
  • 1⁄2 lime
  • 1⁄2 tsp chilli flakes
  • 1⁄4 cup alfalfa sprouts Salt & pepper


  1. Using a fork, lightly mash the chickpeas in a bowl
  2. Add red onion, tomato and cucumber to the bowl and stir until mixed in well
  3. Add Mayvers Hulled Tahini and Kewpie No Egg Mayonnaise and stir until mixed in well
  4. Squeeze lime over the mixture, then add garlic powder and season with salt and pepper to taste. Mix well
  5. Spoon the mixture evenly into the lettuce leaves. Sprinkle chilli flakes and alfalfa sprouts on top to finish
