Pavlova
Makes 12 portions
Ingredients
Pavlova
- 1 x 400g chilled can of chickpea water (separated from the chickpeas)
- 3⁄4 cups of sugar
- 3⁄4 teaspoon of cream of tartar
Topping
- 1 x 400g can of Coconut Whipping Cream
- 1 x 170g can of Passionfruit pulp
- Mixed fresh berries
Directions
- Pre-heat oven to 150C
- Whip one can of chickpea water (from a can of chilled chickpeas) in a food processor until it has soft peaks
- Add sugar and cream of tartar
- Whip until sugar has dissolved and mixture forms stiff peaks
- Cover a baking tray with baking paper and dollop mixture into 12 portions
- Turn oven down to 100C and put tray in oven
- Cook for one hour
- Cool completely
- Top with whipped cream, passionfruit pulp and berries
