'Calamari' marinara
Serves 4
Ingredients
- 160g spaghetti
- 1 can Nature’s Charm calamari
- 20g lemon juice
- 10g white wine vinegar
- 2 Tbsp roughly chopped parsley (+ more for garnish)
- Salt + pepper
- 2 Tbsp olive oil
- 100g broccolini
- 3 minced garlic cloves
- 30g black olives
- 90g halved cherry tomatoes
Breadcrumbs
- 25g vegan margarine
- 30g breadcrumbs
- 0.5 tsp garlic powder
- Salt and pepper to taste
Directions
- Drain calamari and fry in 1 Tbsp olive oil until crispy
- In a separate pan toast breadcrumbs, garlic and margarine until golden
- Slice broccolini in half and fry with garlic in 1 Tbsp oil until tender
- Meanwhile salt pasta water, bring to the boil then add spaghetti
- When pasta is al dente, add it to the broccolini along with 3/4 cup pasta water, lemon juice and white wine vinegar. Stir until combined
- Add tomatoes, olives, parsley and calamari to the pan
- Season with salt and pepper to taste
- Serve sprinkled with breadcrumb mixture and fresh parsley
