Loaded sweet potato
Serves 1
Ingredients
- 1 large purple sweet potato, washed but not peeled
- 15g of coconut bacon
- 1/2 avocado
- 1/2 small green chilli
- 1 Tbsp olive oil
- pinch of salt and pepper
Directions
- Preheat oven to 200C
- Wrap sweet potato in baking paper or foil and put into the oven. Bake for 30 minutes or until soft when knife is inserted
- Meanwhile, mash avocado, chilli & olive oil together in a small bowl & season with salt & pepper
- Remove sweet potato from the oven & then cut lengthways
- Spoon the avocado mixture onto the sweet potato. Top with coconut bacon
- Enjoy!
