'Calamari' marinara

'Calamari' marinara

Serves 4


  • 160g spaghetti
  • 1 can Nature’s Charm calamari
  • 20g lemon juice
  • 10g white wine vinegar
  • 2 Tbsp roughly chopped parsley (+ more for garnish)
  • Salt + pepper
  • 2 Tbsp olive oil
  • 100g broccolini
  • 3 minced garlic cloves
  • 30g black olives
  • 90g halved cherry tomatoes


  • 25g vegan margarine
  • 30g breadcrumbs
  • 0.5 tsp garlic powder
  • Salt and pepper to taste


  1. Drain calamari and fry in 1 Tbsp olive oil until crispy
  2. In a separate pan toast breadcrumbs, garlic and margarine until golden
  3. Slice broccolini in half and fry with garlic in 1 Tbsp oil until tender
  4. Meanwhile salt pasta water, bring to the boil then add spaghetti
  5. When pasta is al dente, add it to the broccolini along with 3/4 cup pasta water, lemon juice and white wine vinegar. Stir until combined
  6. Add tomatoes, olives, parsley and calamari to the pan
  7. Season with salt and pepper to taste
  8. Serve sprinkled with breadcrumb mixture and fresh parsley
