Loaded sweet potato

Serves 1


  • 1 large purple sweet potato, washed but not peeled
  • 15g of coconut bacon
  • 1/2 avocado
  • 1/2 small green chilli
  • 1 Tbsp olive oil
  • pinch of salt and pepper


  1. Preheat oven to 200C
  2. Wrap sweet potato in baking paper or foil and put into the oven. Bake for 30 minutes or until soft when knife is inserted
  3. Meanwhile, mash avocado, chilli & olive oil together in a small bowl & season with salt & pepper
  4. Remove sweet potato from the oven & then cut lengthways
  5. Spoon the avocado mixture onto the sweet potato. Top with coconut bacon
  6. Enjoy!
